The Ship’s Cook Certificate is available through Ocean Wave Monaco in the South of France.

It is a requirement (as of August 2014) for all Chef/Cooks on board charter yachts with 10 crew or more to have a Ship’s Cook Certificated crew member onboard at all times. This is the result of changes in the law brought about by the Maritime Labour Convention (MLC 2006).

The Ship’s Cook Certificate Assessment course is run in accordance with the requirements of MLC to confirm whether the candidates have the necessary skills and knowledge to then apply to ‘Flag’ for the ‘Ship’s Cook Recognition Certificate’

On completion of the Ship’s Cook Certificate Assessment course, we, with the candidates, will complete all registration forms to ensure that all information is correct before submitting the application to CISR and verify all requirements are met (including STCW, Sea Time, Seafarer’s Medical etc). 


This course provides both qualified and experienced sea-going cooks without formal qualifications the chance to earn the CISR Ship’s Cook Certificate through a comprehensive evaluation process.

The Ship’s Cook Certificate Assessment comprises of two days of practical and theory assessment on a variety of dishes, including soups, starters, meats, fish, poultry, vegetables, pastry, baking, and patisserie.

The assessment also covers knife skills, health and safety, provisioning, wastage, galley and operational procedures and menu planning,

There is also a written assessment with 40 questions, requiring a 70% pass mark.

Eligible candidates must have at least one year of experience at sea or on land as a Chef/Cook, plus proof of one month of sea time onboard as a chef.

In compliance with the Maritime Labour Convention (MLC 2006), Ship’s Cook Certificate is now mandatory for chefs onboard vessels with ten or more crew members.

Requirements
  • Chefs must have 1 year experience at sea or 1 year experience on land as a Chef/Cook + 1 month sea service.
  • I have a sufficient level of spoken and written English to understand the course content and to pass any verbal or written assessments.
